Greek Turkey Burger Power Bowl

servings 4 meal prep bowls

INGREDIENTS

  • 1.5 pounds 93% lean ground turkey
  • 1 tbsp fresh garlic
  • 1 tsp ground cumin
  • 2 tsp dried oregano
  • 3 ounces crumbled feta cheese
  • 6 oz bag of spinach¬†
  • Pinch of sea salt & pepper
  • 1/2¬†large red onion
  • 1 pint of cherry tomatoes¬†
  • 1 seedless cucumber
  • 2 lemons
  • 3/4 cup of quinoa
  • 1.5 cup of chicken stock
  • Olive oil spray¬†

INSTRUCTIONS

1. Preheat the oven to 420 degrees F.

2. Add turkey, garlic, cumin, oregano, feta cheese, 1 cup of finely chopped spinach, sea salt, and black pepper into a large mixing bowl. Use ice cream scoop or hand full of meat, roll into a ball, then flatten to form small patties. (makes about 12 small patties) 

3. Set a large oven-safe nonstick skillet over medium-high heat and spray with olive oil. When skillet is hot add the patties. 

4. Cook on one side for 3-4 mins, until edges are browned, then flip patties over. Cook for an additional min, then place entire skillet in the oven and cook until internal temp is 165 degrees, 6-8mins.

5. Cook quinoa with chicken stock according to package. (I sub low sodium chicken stock for the water to add more flavor) 

6. Dice red onion, chop cucumber, and halve cherry tomatoes. 

7. Use the remaining spinach for the bottom of the bowl, and assemble bowl.

8. Dressed with 1/2 fresh squeezed lemon when ready to eat. 

9. ENJOY!
