Spicy Lemon Parsley Cauliflower Rice & Chicken

Today’s submission is another delicious meal approved by 2024’s Edward Flores. He had raving reviews from this recipe and we hope you do too! Bon Appétit!


– 3 Tbs of olive oil
– 1 Boneless Thin Chicken Breast
– 2 Cups of Cauliflower Rice (Cauliflower florets in a food processor or you can find it in the prepared produce section of the grocery store)
– 1 Tbs Lemon Zest
– 1 Tbs Crushed Red Peppers
– Juice of 1 Lemon
– 2 cloves of Garlic
– 1 Tsp of Salt
– 1 Tsp of Pepper
– 1/2 cup fresh Parsley (save a little extra for topping)

Prep time – 10 mins
Cook Time – 15 mins

Time to make this delicious dish!

Step 1. Season thin chicken breast with 1/2 tbs salt & pepper

Step 2. Heat a 1 Tbs of Olive Oil on a skillet over medium heat, and cook for about 2-3 mins per side. Then set aside

Step 3. In the same pan add 2 Tbs of Olive Oil and add the garlic, cook for 1 min until fragrant

Step 4. Add the cauliflower rice, lemon zest, crushed red pepper flakes, 1/2 tbs of salt, and 1/2 tbs pepper, cook for 5 mins stirring occasionally.

Step 5. Add parsley & lemon juice, cook for 1-2 minutes.

Step 6. Serve immediately topped with sliced chicken breast & remaining parsley
