Today we have a gluten free roasted veggie and chicken pasta!
What you need:
4, 8 oz chicken breasts
8 oz gluten free penne pasta
Veggies: onions, bell peppers, zucchini, cherry tomatoes, eggplant
Start by chopping the veggies then adding them to a baking sheet – roast for 15 minutes at 425 degrees
While roasting the veggies, prepared the grilled chicken as desired and cut into bite size pieces.
To make the dressing, mix 1/3 cup olive oil, 2tbsp lemon juice, 1 tsp salt, 1/2 tsp garlic powder, and mix well.
Cook pasta and add to a large bowl with the roasted veggies, dressing and chicken – top with 1/3 cup roasted pine nuts and 1/3 cup crumbled feta
