Today we have Creamy Lemon Parmesan Chicken and Rice!
Lemon Pepper Marinade Ingredients:
24 oz chicken breast
Juice of 1 lemon
1 tbsp olive oil
1 tbsp salt
1/2 tbsp pepper
1 tsp garlic powder
Sauce Ingredients:
180 g fat free evaporated milk
80g parmigiano reggiano
Juice of 1/2 lemon
Pepper to taste
Rice
To Cook:
Prep chicken breasts and tenderize
Mix marinade ingredients, toss in the chicken and let sit for at least 30-45 minutes
Mix ingredients of sauce into a blender and blend until creamy
Cook the chicken on the stove with a nice sear on both sides
Once the chicken is cooked, remove from pan and add the sauce - let simmer for 3-4 minutes
Cook the rice, top with chicken and add sauce over it all
